Healthy Baking is an incredible book that takes a refreshing angle on baking and 'reclaims' the word healthy. Jordan Bourke is an Irish chef who trained in The Ballymaloe Cookery School and went on to do work with Michelin star chefs across the world. He is also one of the leading experts in Korean cooking in the UK. He and his wife wrote Our Korean Kitchen, winner of the Observer Food Monthly Best New Cookbook Award. Healthy Baking re-introduces us to ingredients, reminding us that 'wheat is not the devil', and revealing the benefits of coconut palm sugar as opposed to white cane sugar. We learn about bread making and using an 'active starter' to make deliciously healthy sourdough breads. There's also a whole section on ferments and pickles, and area Jordan is particularly passionate about since his time training in Korea. This book would make an excellent gift for anyone interested in being creative in the kitchen. It's beautifully bound with stunning photographs that make you want to put the effort into being a more conscientious cook.
