This gorgous cookbook features 100 the Kai restaurant in Galway's best-loved dishes, from the legendary Kai fish fingers that they can’t take off the menu to showstopper cakes from the irresistible daily line-up on the bar. It's laid out seasonally but using the Irish seasons Imbolc, Bealtain, Lunasa, Samhain and is a love letter to Jess' adopted home in the West of Ireland, showcasing high-quality produce, sourced locally and cooked intelligently.

When Jess and Dave Murphy opened the door to their award-winning restaurant in 2011 they named it Kai - the Māori word for food, referencing Jess New Zeland roots. With a clear emphasis on community and sustainability, Jess has made it her mission to provide sustenance through food as well as friendship. With the only Michelin Green Star in Ireland, Kai is celebrated for their environmentally focused menu, working closely with over 300 local producers and farmers. The recipes are peppered with stories and recollections that expound this ethos from this dynao of the Irish culinary world, and make you even more inclinded to recreate these dishes at home.
