Cook: traditional Irish Cooking with Modern Twists
New from Nine Bean Rows and chef Graham Herterich comes this beautiful new book Cook: Traditional Irish Cooking with Modern Twists.
Graham grew up above his families butcher shop and first learned to bake with his granny, before becoming a classically trained chef. He centers this book around that childhood experience, even giving us a map of the street he grew up on and uses it to reflect and add modern twists to classic Irish dishes.
The recipes are broken up into the five mealtimes of breakfast, lunch, dinner, tea and supper, as a way to frame the unique way we eat in Ireland. There is also a chapter dedicated solely to pork and bacon.
As well as all the classic dishes there are also recipes for Irish pheomenia such as ‘mammy salad’, a chicken fillet roll, lasagne, coleslaw and chips, and the mikado biscuit, all feature alongside modern versions updated with the flavours and ingredients available to us now.
Written with incredible warmth Cook shows that traditional and modern Irish cooking isn’t defined by what it is, but rather by what it does: it nurtures us, warms us and makes us who we are.
